Once the must extracted, it flows down by gravity via tubes from the press bottom to the thermoregulated stainless tank (located underground). Each tank has a capacity of 25hl (2 pressing). The press wine is cooled all night to 5-6°.

The particules in suspention present in the juice decant by gravity to the bottom of the tank.This way, the must its aromas are refined.The mire will then, be removed and send to distillery.
