The Blending

Towards the end of the year of ageing, the blending takes place after a long analysis and tasting session of the batches. Only at this moment the batches selected will meet each other for the elaboration of the Grand Cru. The selection is draconian.

Once the blending settled, the wine is once again barrelled and kept on our cellar for a second year. It continues its ageing quietly as the « Maître de chai » or cellar master looks carefully after it.
