With the véraison* (grapes changing of colour), all the excess leaves which may inhibit the maturity of the grapes are removed. This deleafing depends the orientation of the rows of the vines, the side facing the rising sun will be deleafed.

This allows the grapes to receive the morning sun, encouraging ripening and to be well aired to breath and dry. This also encourages the development of the noble rot. The remaining leaves will act as a parasol aver the grapes protecting them from "sunburn".
