Only done by hand, the harvest is effectuated by successive « tries » or waves through the vines. 2 to 6 waves in each plot. Each grape will be scrupulously being inspected. Only bunches or grapes with the correct amount of botrytisis will be picked. Those that have not reached the correct level yet will be left on the vine to develop futher.They will be picked up during a future passage if their level of maturity allows it.

Rigorous selection is the main secret of a great Sauternes. Quality is the priority. Picking bad grapes changes the nature of the wine and compromise the vintage.
